Persimmon cake / Kaki cake

The cake i baked the last day of 2010 :) My first try of making persimmon cake. Persimmon is one of Bibingclara's favorite fruit. I get the chance of buying these yummy and cheap persimmon from chinese food store. It was very sweet and tamang-tama lang ang pagkahinog. My daughter can't finish them all so instead of waiting that they'll become very, very ripe i decided to turn them into cake :)
big pieces of persimmon fruit for less than 5 euros a kilo
Ingredients :
2 cups persimmon pulp
( consumed 3 pieces of persimmon fruit )
4 eggs
50 g butter
50cl milk
1 1/2 cup flour
1/2 white sugar
1tsp baking powder
1tsp baking soda
1tsp cinnamon powder
1/2tsp nutmeg
1 cup chopped walnuts
In a glass bowl, mix the persimmon pulp, beat eggs, pour the milk then add the butter. In another bowl, mix the flour, add the sugar+baking powder+baking soda+cinnamon powder and nutmeg. Mix the dry ingredients to the wet ingredients then add chopped walnuts.
Put in a baking dish then bake for 45 minutes at 180°C
welcoming 2011 na sobrahan sa fireworks kaya nasunog!
