Gratin de Chou-fleur / Cauliflower cheese

This recipe comes from one of the recipe card of my mother-in-law. I have seen so many beautiful heads of cauliflower ( they're in season ) and haven't hesitate to buy one. Usually, we just only eat steamed cauliflower or brocolli ( nakakasawa ) and i only eat them in mixed chinese vegetables called chop suey.

This dish is simple, healthy and affordable. Here's how :
1 cauliflower
6 eggs
200 g grated cheese
20 cl cream
50 g butter
3 tbsp wine vinegar
1 bouquet of chervil
some onion chives
salt
pepper
Cut the cauliflower into pieces, washed and have them a quick dip in the water with wine vinegar for some minutes. Place and cook the cauliflower in the casserole with salted water for about 25 minutes, then drained. Meanwhile make the sauce, beat the eggs in the glass bowl add the cream+grated cheese and herbs. Salt and pepper to taste. Brush the baking pan with butter, arrange the cooked cauliflower and pour in the sauce over. Sprinkle more with grated cheese and a bit of butter on top. Bake at 190°C for 15-20 minutes or until the sauce is fully absorbed. At the end of cooking, set the oven on the grill setting to let the top gratiner. It was a delicious, appreciated dish i made for my family. Perfect for roasted meats. I'll re-do it definitely! :)
