Pina Queen

Speaking of Pina, I bought 2 whole pineapples because i missed eating pineapples like when i was in Philippines. So good dipping it with bagoong (shrimp paste) or sprinkle it with a little salt. Claudebiko's find it little strange the way i eat it and he's trying to imagine how i could mix something sweet with a little salty taste on it??? i said why not??? We still have one whole pineapple and i would like to cook it before it will get stale. Since we both love eating rice i decided to cook Pineapple Fried Rice and this is something new for his taste.


 This is how i cook my Pineapple Fried Rice

You will need:
1 whole Pineapple
1/2 cup of cooked chicken cut into pieces
1/2 cup of shrimps
1 cup of cooked rice
cooking oil
1 egg
1 tbsp. of minced garlic
2 medium shallots
1 green medium chillis
2 stalks of citronelle
2 stems of coriandre
1/3 tsp. turmeric powder
cashew nuts (optional)
salt to taste

Cut the pineapple into two, lenghtwise make a carve and scoop out the flesh, cut into chunks
 In a wok, heat cooking oil, fry the garlic until slightly browned, add the shallots, citronelle, chillis put the
cooked chicken add cooked rice stir thoroughly. Now you can add the shrimps, beaten egg, pineapple chunks, coriandre, salt, cashew nuts and turmeric powder. Mix it very well! when the rice is thoroughly mix then its ready.

It was came out really good! Claudebiko liked it too! We both enjoyed our dinner last night
Next time i will try a real Thai Pineapple Fried Rice :)
